Lambrusco
The area of Reggio-Emilia, Parma, Modena and Mantova are known for the Lambrusco wine. Outside of Italy the Lambrusco wine is often seen as a low quality sweet sparkling wine, but it is not a lemonade with alcohol! The bubbles are natural by fermentation.
Originally the Lambrusco was not sweet, and did not exist in the white and rosé style made in modern days. By limiting the contact of the grape skin with the must, the color is changed and it is sweetened by adding rectified concentrated grape must. That way it became great for export, but not for it’s image as a quality wine.
There are some really good Lambrusco wines when not fermented sweet. It becomes an excellent dry wine with strawberry notes and with a slightly bitter finish. The sweet fermented version is more used as a dessert wine.
